Roasted Butternut Squash, Green Beans and Spinach

Every day after work I go to the gym – pretty much to think about dinner the entire time.

I knew that we had a butternut squash to use up and I’ve only cooked it once before. So I was fully prepared to come home and make the worst meal of my life. I started chopping and roasting and seasoning – I took my time and considered everything available. I visualized what the perfect plate would look like. I wound up making the best meal ever!

Roasted Butternut Squash with Green Beans, Spinach and Goat Cheese

1 butternut squash
A bunch of green beans
A couple handfuls of spinach
A few macadamia nuts
2 oz. Goat Cheese
Olive Oil
Balsamic vinegar

Preheat oven to 400F.
Cut the squash lengthwise in half. Then cut halves in to .375″ sections. Line a cookie sheet with parchment paper and arrange squash on pan. Drizzle with olive oil and season with salt, pepper and nutmeg. Bake in oven for 20 minutes. (During this time I took a shower and visualized the rest of the meal).

After 20 minutes turn the squash to get the other side. Squash roasts for a total of 40 minutes.

Steam your green beans (I used the microwave – 3 or 4 minutes).

Toast your macadamia nuts (I burned the first round – it only takes 1 or 2 minutes).

Put a handful of spinach in a bottom of a bowl. Top with squash, green beans and a few crumbles of goat cheese. I also included a few slivers of a fancy cheese I had in the fridge. I covered with macadamia nuts and drizzled with an olive oil/balsamic vinegar mixture.

Christmas Christmas

This weekend Jeremy and I are going to my company Christmas party and hosting a party of our own – so I felt the need to decorate for the holidays a little more than usual.

I love the way these metallic ornaments and little bulb lights blend in with the look and feel of the rest of the house.

And I love these little metallic trees.

I really love seeing how everyone else is decorating for the holidays. My favorite so far is Merry Mishap’s minimal mantle.
